vegan cheesecake
i'm not vegan but....
ingredients
- cashews
- condensed milk/honey
- strawberries
- oreo/digestive biscuits
- butter
recipe
- soak the cashews in hot water for about 30 minutes.
- in a zip lock bag, smash the oreo/digestive biscuits to a crumbly consistency.
- add some melted butter and mix
- in a mason jar, add the biscuit base and flatten with a spoon.
- in a blender, add the cashews, condensed milk/honey and strawberries.
- blend till smooth and pour over the biscuit base.
- top with more fresh strawberries or condensed milk and cover with plastic wrap.
- refrigerate for at least 30 minutes.
tips
- couldn’t find cream cheese whilst living in nallasopara so when i found this recipe i was too happy.
- i remember bringing in cheesecake jars everyday in college for my friends.
