tomato salsa
a versatile sauce for your kitchen
ingredients
- tomatoes
- onions
- garlic cloves
- chilli crisp
- dried oregano
- tomato ketchup
- fresh basil
- salt and pepper
recipe
- roughly chop the garlic cloves, onions and tomatoes.
- in a pot, heat some oil and add some chili crisp, garlic and onions.
- sprinkle some salt to make the onions sweat faster.
- once, the onions turn translucent, add some tomatoes and cover the pot and let it simmer over low-medium heat.
- once the tomatoes soften, sprinkle some pepper and oregano on it.
- let the veggies soften into a slush till the tomatoes let go of their skin/peel.
- let the mixture cool down and then blend till no chunks remain.
- heat some more oil in the pot and add the mixture.
- add some tomato ketchup for funsies.
- stuff 2-3 fresh basil leaves in some clean and dry, glass jars.
- pour in the salsa, wipe clean the rims and refrigerate!
tips
- i know i know!! adding tomato ketchup is weird but trust me, it helps preserve and gives the whole thing a bit of kick.
- its a pasta sauce! it’s a pizza sauce! it’s even a dip albeit cold! what more could one ask for!
- an untouched, sealed jar should ideally last for at least 2 months in the fridge.
