ingredients
- flour
- water
- salt
- spring onion greens
- 1 spring onion bulb
- soy sauce
- oil
recipe
- in a mixing bowl, take your flour and pour in some lukewarm water and mix with a fork/chopsticks till you get a shaggy dough.
- go in with your hands and knead till it’s smooth.
- cover the dough and keep it aside.
- pour some soy sauce in a bowl.
- finely chop the greens and add it to the soy sauce
- heat some oil (not steaming hot!!) and pour over the soy mixture.
- divide the dough in small balls and roll out each into a long strip.
- lightly spoon some soy mix along the length and fold the ribbon upon itself.
- roll the flour ribbon into a spiral and tuck the end in the center.
- flatten the spiral and get working with the rolling pin.
- roll out the dough ball till is evenly flat and thin.
- prep all your dough balls so and keep aside.
- heat up a pan
- cut the spring onion bulb in half and stick a fork in the round end.
- take some oil in a bowl and use this contraption to very lightly grease your pan before roasting each flatbread
- roast each flatbread/roti till they golden around the edges.
- cut into triangles and enjoy!
tips
- a soy sauce+grated garlic+honey dip goes real well with these!
