gnocchi

ingredients
- a vegetable of your choice
- all purpose flour (T45)
- salt
- pepper
- paprika if the vegetable allows it

- choose a vegetable: potatoes, sweet potatoes, broccoli, yams, beetroots, carrots, green peas, spinach and butternut squash even!!
- i have only tried boiling my veggies for gnocchi but i believe that roasting them would be better (gluten develops slower when roasted especially in the potatoes; makes the dough less sticky)
- mash the boiled veggie as finely as you want. i prefer not having chunks of veggie in my dough as rolling each gnocchi feels lumpy.
- sprinkle salt and pepper or any other spice onto the veggies.
- add in a cup of flour and knead it in. keep adding flour till you reach a good rolling consistency.
- smoothen out the dough and let it rest in covered bowl for 10 minutes.
- prep your counter and another bowl with flour and divide the dough into workable pieces (the size of a fist)
- roll out the piece into a thin log and use a butter knife to cut the log into the size you would like your gnochhi to be.
- dust your hand with flour and roll out each piece against your palms or even a gnochi board!
- drop the pieces into the flour coated bowl roll them around so they get covred in flour.
- these can be dropped in boiling water and cooked till they rise to the surface + 5 minutes :)
- to store them, use ziplock bags and which will keep them good to use in the freezer for at least a month.
