butternut squash soup
one for the soul
ingredients
- squash or any veggie tbh
- chilli crisp
- stock cube
- water
- coconut milk/fresh cream
- salt and pepper
recipe
- peel and cut the squash into mid-sized chunks.
- boil with salt till softer than ‘fork tender’, drain and blend till smooth.
- heat oil with pan, add diced garlic, chili crisp and salt.
- add the squash.
- add stock cube and 2 cups of water.
- bring it to a boil and then lower the heat and add coconut milk.
- mix occasionally and let it simmer down to desired consistency.
- add pepper (or paprika) as per taste.
tips
♥ optional veggies: peas and beetroots (switch out the coconut milk for fresh cream)
