upside down apple and cinnamon cake

ingredients
for the caramel:
- 90g unsalted butter
- 100g sugar
for the cake:
- 2-3 apples peeled and sliced
- 1/2 tsp vanilla extract
- 110g butter (at room temperature)
- 100g white sugar
- 2 eggs
- 90ml milk
- 1/2 tsp vanilla extract
- 1/4 tsp cinnamon (optional)
- 190g all purpose flour
- 1/2 tsp baking powder
- 1/2 tsp bicarbonate of soda
recipe
- Preheat oven to 170C.
- Peel and slice apples and arrange in a tin.
- To make the caramel, to a pan add the butter and sugar.
- Heat on low heat and allow to melt slowly.
- Keep stirring until fully melted.
- Once fully melted and combined remove from the heat and pour over the apples and set aside.
- To a large bowl, add the butter and sugar.
- Mix well then add the eggs and vanilla extract.
- Beat until creamy.
- Now add the flour, cinnamon, baking powder, salt and baking soda.
- Combine well, add the milk and stir.
- Pour the cake mix over the caramel and apples.
- Bake for around 45mins or until the center is cooked.
- Once ready remove from oven and leave to stand for 10mins.
- Put a plate on top of the cake tin and flip over.

tips
- If the cake is browning too quickly you can cover the cake with foil half way through the cooking time.
- Goes sooo well with vanilla ice cream or whipped cream!
