portuguese coriander soup
ingredients
- eggs
- coriander
- salt
- coarse black pepper
- stock cube
- garlic cloves
- olive oil
- sourdough bread slice
recipe
- in a mortal and pestle/ blender, add a handful of coriander stalks, olive oil, salt, pepper and garlic cloves.
- grind till you have a fine mixture.
- place a big spoon of that mixture in a bowl.
- in a pot, boil 2 cups of water with 1-2 stick cubes.
- slightly toast your bread.
- in another pot, bring water to a boil, create a spiral with a chopstick and drop an egg and pray it poaches well.
- fish it after the white solidifies a bit and lay it on a paper towel.
- pour some stock in your bowl with the mixture and lay your slice of bread on top. place the egg on your bread whislt hoping the white doesn’t rip.
tips
♥ poaching an egg is so hard and i rarely get it right so often i just drop my egg in the boiling stock to get ribbons instead.
